Paella made with pasture-raised chicken, pork & local fresh organic vegetables (Green beans, artichokes, lima beans, tomatoes, garlic...). It is seasoned with saffron and "Pimenton de la Vera" (Spanish smoked paprika).

To get the best of both worlds, try the mixta, which is Paella cooked with pasture-raised chicken, fresh local organic veggies, and fresh seafood added on top (shrimp, scallops, mussels & grouper). This is our most popular paella for most Americans and the most colorful one.

Valencian Paella (Paella Valenciana)
This IS the original paella from Valencia. Seasoned with Spanish saffron and cooked with fresh rabbit, pasture-raised chicken & fresh organic vegetables: garrofó (lima beans), tavella, ferraúra (wide green beans) and tomatoes. Optional ingredients: snails, duck, artichokes, garlic, red bell peppers and tavella (a type of long white bean).

WE CAN COOK PAELLAS ON-SITE FOR UP TO 1000 PEOPLE!
Part of the fun of a paella party is to watch the process of making authentic paella. It takes us about 2 1/2 hours from the time we start setting up until we are done cooking and ready to serve the paella. We will need an outside flat area of about 10'X10’ to set up all our equipment. We always bring a tent in case it rains.
