How paella catering works at Mission San Luis

Mission San Luis has both a courtyard and a warming kitchen, so it suits either style of service. Ask the venue whether outdoor cooking is permitted for your date and location on the grounds. If it is, your guests get the full show of paella cooking in the pan. If not, we deliver it hot and serve from the warming kitchen.

Where a venue allows outdoor cooking, we cook paella on-site in giant traditional pans so guests can watch. It takes about 2 hours from setup to serving and needs a flat outdoor area of at least 10′ x 10′ (more for larger parties), plus truck access. Where cooking on the grounds is not allowed, we cook fresh nearby and deliver it hot, ready to serve from trays or plated by our servers.

Menu ideas
